Ingredients of Irish Vegetable Soup

  1. It’s of medium Yukon potatoes, peeled, cubed.
  2. You need of large carrots, peeled, chunked.
  3. Prepare of cauliflower, roughly chopped.
  4. You need of bulb of fennel, chopped.
  5. Prepare of bulb celery root (celeriac), chopped.
  6. You need of celery, chopped.
  7. Prepare of medium onion, chopped.
  8. It’s of garlic cloves, minced.
  9. It’s of butter.
  10. You need of fresh thyme.
  11. You need of fresh rosemary, chipped.
  12. You need of turmeric.
  13. It’s of bay leaf.
  14. You need of Salt and pepper.
  15. You need of chicken or vegetable broth.
  16. You need of fresh heavy cream (optional).

Irish Vegetable Soup instructions

  1. Melt butter and Sauté onions in the bottom of a large stock pan until translucent, add garlic and stir frequently for 5 minutes.
  2. Add all the chopped vegetables, herbs, salt and pepper to the pot and roughly stir (leave bay leaf on top to easily remove after cooking).
  3. Add the broth to the pot, just covering the vegetables.
  4. Bring to a boil and simmer for 25-30 minutes (or until vegetables are fork soft).
  5. Remove the bay leaf, then use an immersion blender to blend all the vegetables together to a creamy, smooth consistency.
  6. Add cream (and more butter if desired) and blend.
